Hello dear friend!
This week I decided to be wild and crazy. I hopped on a jet plane and flew all the way to Vancouver for my baby sisters Birthday!
She turned 23 this year, and I was happy to be able to come out and spend a few days with her celebrating 🙂
We got up to all the usual sister shenanigans, girl talk, meditations, copious amounts of tea and walking and of course, forcing her to snap pics of me doing yoga:
For her actual birthday day - we decided to go with tradition and take the 1000 mile trek from downtown Vancouver to Superstore so that we could celebrate with durian.
We used to take this trip a few times a month (or even once a week there for a while!) because the Super Store durian were the most reliable. Ie. they were thawed out so we could open them up a little and smell if they were good or not before purchasing them.
The long walks and train rides are some of my fondest memories of living in Vancouver, because at times it seemed like Sammi and I were ships passing in the night. We lived together but often had such different schedules that we didn't get to spend a lot of time together. Durian was an excuse to take several hours just for us - and it still is today!
We only got a few:
We dined and watched Project Runway - and learned that in Fashion, one day you are in, and the next day you are out. It sounds like a harsh world! I am going to assume that I have yet to see the day where I am 'in.'
I am so grateful for my beautiful sister. She is a creative genius, a precious soul teacher, wise beyond her years (and mine a lot of the time) and one of the most honestly caring people I have ever known. I love you so much baby sister - thank you for coming to earth and being my soul mate.
The next day was spent blogging, writing, wandering around in the rain and having tea 🙂 It was a classic Vancouver day.
Sammi then took me to the little Asian market by her work, and I was inspired by the things that were going bad and being sold for 1 dollar produce to make myself a zucchini pasta dish!
This is a tomato/peach/ginger/mint sauce over zucchini noodles, and it was amazing. Here are the ingredients I used:
If you didn't catch that, here is what I did:
Peachy Tomato Zucchini Pasta
Ingredients:
- 4 large peaches
- 2 cups tomato, diced
- 2 inch piece ginger, grated
- 2 1/2 limes, juiced
- 1/4 cup mint leaves
- 3 dates
- 4 medium zucchini
Instructions: Blend peaches, tomato, ginger, lime juice, mint leaves and dates until smooth. Taste for desired flavour. If you are more of a savoury person, you could skip the dates and use more tomato - sundried tomatoes would also have been nice here! Spiralize your zucchini. Toss and enjoy!
I plated it nicely so that I could blog about it:
I found this sauce had the perfect balance of sweet, salty, and sour.
Then, like the lady that I am, after I took those photos I dumped that nice little portion back into my trough and ate the whole recipe:
Tonight I am off to Calgary to see my parents! I realized today that I have not hung out with my parents sans Marcus or Sammi in over 5 years! Clearly we are long over due.
